Peter’s impressive culinary portfolio includes the L’Escargot restaurant in London, Grand Hyatt Cairo in Egypt, and the Oberoi Hotel in Mumbai.

As Executive Chef, Peter oversees all the food menus at the Chifley Wollongong, which vary from the fine dining C Grill restaurant, popular C Bar, private functions, cooking classes and Sunday High Teas. The C Grill restaurant on Level 3, is presented in a relaxed dining experience with a strong menu emphasis on freshness and signature prime beef cuts charred to perfection. The C Bar is an open bar in the lobby space, and perfect for evening drinks and snacks. ‘Big Kids in the Kitchen‘ cooking classes are held monthly with a different cuisine theme…and Sunday High Teas are scheduled monthly.

My High Teas are designed around my creative skills as a Pastry Chef in past years, availability of local produce and client budgets. Due to the popularity of our monthly Sunday High Teas, which are often booked out in advance, we decided to extend this delightful menu for conferences and private events

With numerous accolades to his name, Peter also recently was awarded a Gold Medal and State Winner in the inaugural Dilmah Professional High Tea Challenge. Dilmah Tea hosted tea competitions in five Australian states, with the intention in promoting a greater awareness and understanding of tea. Dilmah founder, Merrill Fernando believes Australian cuisine is on par with the finest the world has to offer…and his reasoning for establishing this tea challenge is to challenge chefs and food industry professionals to use their culinary creativity to craft an authentic High Tea.

Winners of this competition were judged on their originality, creativity, taste, respect and understanding of the specific tea, harmony of flavour, presentation and style. And the winners subsequently won a sponsored trip to Sri Lanka for six days, which included visits to Dilmah Tea Gardens and a holiday at Ceylon Tea Trails courtesy of Dilmah Tea.

The trip to Sri Lanka was an incredibly eye-opening for me with tea the feature item from start to finish in the tour’, Adrian said. ‘Having experienced tea in so many different menu forms from breakfast, lunch, cocktails and degustation dinners…through to witnessing the tea buds being hand-picked in the field then dried, infused and packed, certainly makes me appreciate the tea as a finished product and the journey it takes.

The ‘High Tea Delight‘ package is suitable for any size event ranging from private meetings, conferences, birthday celebrations and wedding receptions. Food items can be displayed on traditional high stands on the tables, or set up as a food station within a private room.
